

Kitty Coles Burrata and ChillI Oil Dressed Tomatoes.

Ingredients

1 ball of mozzarella

3 tablespoons crème fraîche

2-3 large tomatoes chopped into large chunks

1-2 tablespoons Peanut Rāyu
-
small bunch of basil, leaves picked ( this would also be great with chives or parsley or even no herbs)

1 tablespoon extra virgin olive oil

Sea Salt and freshly Ground black pepper.
Directions
If your using burrata work away if using mozzeralla and making cheats burrata : Tear the mozzeralla into a bowl, then dollop in the creme fraîche, Stir together, then set aside. As it sits, the two ingredients become one, creating something really delicious and creamy that is a lot like burrata.
Put the Tomatoes into a bowl with a big pinch of salt ( being careful not to over-salt as the rayu has a good bit) and the Peanut Rāyu. Set aside for 10 minutes. This is the key to a delicious tomato. The salt will draw out the moisture from the tomatoes and bring out the flavour and the liquid will make a dressing.
After 10 minutes and basil leaves and toss everything together
Spoon the mozzeralla mixture onto a plate or platter , then pile on the tomatoes. Finish with the oil, a little more salt and some black pepper.
