Spicy Pulled Chicken Salad

Ingredients

2 cooked chicken breasts

1-2 tbsp mayonaise
-
1 tbsp sweet white miso (start with 1/2 if its not sweet)

1 tbsp hot peanut rayu
-
1 tbsp black bean rayu
-
1/2 lemon juiced
-
1/2 head iceberg lettuce shredded
-
1/4 head white cabbage shredded
-
4-6 Persian cucumbers thinly sliced / 1 English cucumber

1 tbsp toasted sesame seeds
-
2 spring onions thinly sliced
-
1 handful thai basil (or your preferred herbs, coriander is great here too)

crispy onions to tase

salt and sugar to taste
Directions
Add your roasted or poached chicken to a large bowl and use electric beaters to shred it. You can also use a stand mixer with the whisk or paddle attachment. I usually roast my chicken breasts in the oven with a little olive oil, salt, and a spice mix that suits whatever I’m making.
Mix the shredded chicken with the rest of the ingredients and the sauce, saving the crispy onions to add just before serving.
